Healthy Super Bowl Sunday Sloppy Joes

According to The Today Show this morning, behind Thanksgiving, Super Bowl Sunday is the second biggest food consumption day! Can you believe that? Don’t get me wrong… I love food, but what on Earth?! Without a doubt, I would guess Christmas. Anyway, in honor of this indulgent day I’d like to share my favorite healthy recipe that will make an excellent dish to serve on Super Bowl Sunday!

Healthy Super Bowl Sunday Sloppy Joes Are Incredible

A few years ago, I discovered these Skinny Taste Sloppy Joes while browsing through Pinterest. They are so good I now make them every winter! I make a few small changes to the recipe to fit my tastes. For instance, I like to swap out ground beef for ground turkey. I also only use one pound of meat as opposed to 1.25 lbs the original recipe recommends.

Because this recipe has a ton of veggies, it is an excellent way to “trick” your husband and kids into eating them. When you mince the veggies properly, they blend right into the meat and you honestly cannot decipher what you are eating. I use the Vitamix blender on pulse to mince the veggies and they come out perfect every single time.

My husband likes to go bunless, but I love toasting deli thins and eating these as open faced sandwiches. The meat makes for amazing leftovers, which is why these are also ideal to meal prep. The meat can easily reheat in the microwave.

I should note, my adaptation of the recipe turns out to be ZERO WW POINTS! (Minus the bun, of course.) These sloppy joes taste exactly like the real deal. Therefore, they will not disappoint. I promise.

Skinny Taste Sloppy Joes

This healthy sloppy joe recipe was adapted from Skinny Taste. Find the original recipe here

Ingredients

  • 1 lb 99% fat free ground turkey
  • 1 tbsp steak seasoning or seasoned salt
  • 1 carrot minced
  • 2 garlic cloves minced
  • 1/4 cup red bell pepper minced
  • 4 oz mushrooms minced
  • 1 tbsp red wine vinegar
  • 1 tbsp Worcestershire sauce
  • 2 cups tomato sauce
  • 2 tbsp tomato paste

Instructions

  • Chop all the vegetables really fine, using a chopper, food processor, or Vitamix. 
  • Heat a large skillet over medium high heat.
  • Add the meat to the pan and break it up as it cooks.
  • Season with steak seasoning and cook the meat until it browns.
  • Add onion, garlic, carrots, mushrooms and red peppers to the skillet.
  • Reduce heat to medium and add red wine vinegar and Worcestershire sauce, cook 5 more minutes.
  • Add tomato sauce and paste to pan, stir to combine.
  • Cover and reduce heat to simmer and cook an additional 5 minutes.
  • Using a measuring cup, pile 1/2 cup of sloppy meat onto toasted buns.

Notes

I love toasting deli thin buns and eating the sandwich open faced for an even lighter take!
