Anyone else feel like this beautiful weather is really screwing with their fall routine?! I mean I ordered a Starbucks holiday drink today and seriously debated an iced coffee… in NOVEMBER! I really hate to complain about these 60º days. Soon we will get whacked in the face with winter and it’s not going to be pretty. Mother Nature clearly decided to go on a fall strike, but I haven’t and have been making my favorite fall recipes anyway.
My absolute favorite fall recipe is actually one that my girlfriend, Heather, came up with. Heather is a fitness and lifestyle blogger over at dumbbellblonde.com. Last year she developed an ebook called Not Your Grandma’s Cookbook and it’s loaded with delicious recipes. Not only is this my favorite recipe out of her book, but it seriously is my favorite fall recipe. I’ve already made it three times this past month! Side note: I made this yesterday and forgot to buy mushrooms and greek yogurt. I just left them out and it’s still awesome. My personal modifications to this recipe are using bay leaves instead of sage leaves and I typically top the soup with croutons instead of walnuts and brown sugar! It’s so, so good.
These pumpkin muffins from Tone It Up are perfect for a grab-and-go breakfast or a mid-morning snack. I love these because they are dense and moist. I always swap the cinnamon out for pumpkin spice! So good! The recipe makes 10-12 muffins, but be aware – they go fast. The serving size is 2-3 muffins.
I also love this Three Bean Salad. I guess it is more of a summer salad, but whatever, I’m obsessed with it. This is another Tone It Up recipe find and is perfect for lunch. The recipe card has the original recipe, but I modify it a lot. I use whole 16 oz cans of cannelloni beans, chickpeas, and kidney beans and I omit the celery and cilantro. Since I essentially double the recipe, I double the rest of the ingredients. I find that this recipe is good on the first day, but excellent on the second. I recommend prepping this the night before you want to eat it. I love how the flavors really come together. This recipe makes a ton. With Thanksgiving approaching quickly, you might consider bringing this to your family gathering or friendsgiving for a side dish!
